Le magazine Restaurant annonce le classement S.Pellegrino 2008 des 50 meilleurs restaurants du monde
El Bulli décroche la palme
Pour la troisième année consécutive, Ferran Adrià se retrouve en tête de classement. Le Fat Duck de Heston Blumenthal conserve également sa deuxième place sur le podium et le restaurant éponyme parisien de Pierre Gagnaire la troisième marche.
Le Mugaritz, qui a remporté le prix ‘Chefs’ Choice’, a obtenu son meilleur classement à ce jour en réussissant à grimper en quatrième position cette année. Ce restaurant est apparu pour la première fois sur la liste en 2006 en 10ème position. Puis, l’année dernière, il est passé en 7ème position. Son classement cette année reflète bien l’accroissement de sa réputation àl’échelle internationale et confirme qu’Andoni Luis Aduriz est aujourd’hui prêt à détrôner les trois légendes culinaires en tête de classement.
A l’âge de 36 ans, Aduriz est l’un des jeunes chefs ayant réussi à gagner le respect de ses anciens maîtres. Autre virtuose de la gastronomie, Grant Achatz du restaurant l’Alinea, âgé d’à peine 33 ans, rentré au classement l’année dernière directement en 36ème position, a réussi à grimper de 15 places pour se hisser en 21ème position cette année.
La meilleure nouvelle entrée cette année est celle du restaurant Vendôme sous l’égide du formidable Joachim Wissler. Considéré comme le plus célèbre pionnier de la gastronomie allemande, Wissler apparaît sur la liste aux côtés de compatriotes tels qu’Hans Haas du restaurant Tantris et Harald Wohlfahrt de Die Schwarzwaldstube.
Autre nouveau venu cette année, le restaurant espagnol Asador Etxebarri dirigé par le chef Victor Arguinzoniz. A la différence des maestros amateurs de gadgets High Tech en tête de classement, ce chef autodidacte, créateur de la haute cuisine sur le gril qu’il appelle “cuisine primitive”, travaille ce qu’il a toujours dompté : le feu.
Toujours aussi populaire (il est apparu sur les 6 dernières listes), le St John de Fergus Henderson a réalisé la meilleure montée et est le restaurant à visiter impérativement cette année par les 50 meilleurs chefs présents lors de
l’évènement. L’année dernière, le chef du Tetsuya de Sidney, Thomas Keller du restaurant French Laundry ainsi que Per Se et Fulvio Pierangelini de chez Gambero Rosso étaient parmi les chanceux ayant dégusté de bon appétit un festin ‘réservé uniquement aux chefs’ composé de jambon, carottes et beignets bouillis.
Le néo-bistrot parisien Le Chateaubriand, dirigé par le jeune chef basque Inaki Aizpitarte, est considéré comme un candidat sérieux à l’entrée au top 50 en 2009. Est-ce ce que l’eau basque contient qui fait de cette région un terrain propice aux talents culinaires ?
Le Lake District serait-elle la prochaine région à nous faire valser les papilles ? Le restaurant contemporain de Simon Rogan, l’enclume, vainqueur du prix ‘Readers’ Choice’ 2008 se trouvant dans ce coin pittoresque de l’Angleterre,
tous les espoirs sont permis.
Le classement des restaurants résulte du vote d’un jury, composé de professionnels de l’univers de la gastronomie de renommée internationale, collectivement appelé la Nespresso World’s 50 Best Restaurants Academy (l’Académie Nespresso des 50 meilleurs restaurants du monde).
Cette académie compte près de 700 chefs, restaurateurs et critiques gastronomiques dont 200 votent pour la première fois.
